I made this recipe because I discovered some chopped corned beef in my freezer that I needed to use and I wanted to do something different with it. This came out really good!

Ingredients For corned beef & cabbage hoagies

  • FOR THE TOPPINGS
  • 2 c
    shredded cabbage or fresh cole slaw mix
  • 1 lg
    thinly sliced onion
  • 1 Tbsp
    butter
  • 1 Tbsp
    extra virgin olive oil
  • FOR THE SANDWICH
  • 1 pkg
    pepperidge farm bakery classics top sliced hot dog buns, toasted
  • 2 lb
    cooked corned beef brisket, chopped
  • 8 slice
    swiss cheese

How To Make corned beef & cabbage hoagies

    In a large skillet melt butter with olive oil over medium high heat.

    Add onions. Saute until starting to caramelize. Add shredded cabbage and cook until cabbage is wilted.

    Add diced corned beef brisket to hot dog bun. Top with fried cabbage mixture and a slice of swiss cheese.

    Place sandwiches on a cookie sheet and place in oven under broiler, just until cheese starts to brown and tops of bread starts to toast. (1 or 2 minutes)

    Serve with Chips or Fries and a Pickle!
