corned beef & cabbage hoagies
I made this recipe because I discovered some chopped corned beef in my freezer that I needed to use and I wanted to do something different with it. This came out really good!

Ingredients
- FOR THE TOPPINGS
- 2 cups shredded cabbage or fresh cole slaw mix
- 1 large thinly sliced onion
- 1 tablespoon butter
- 1 tablespoon extra virgin olive oil
- FOR THE SANDWICH
- 1 package pepperidge farm bakery classics top sliced hot dog buns, toasted
- 2 pounds cooked corned beef brisket, chopped
- 8 slices swiss cheese
How To Make corned beef & cabbage hoagies

Step 1In a large skillet melt butter with olive oil over medium high heat.

Step 2Add onions. Saute until starting to caramelize. Add shredded cabbage and cook until cabbage is wilted.

Step 3Add diced corned beef brisket to hot dog bun. Top with fried cabbage mixture and a slice of swiss cheese.

Step 4Place sandwiches on a cookie sheet and place in oven under broiler, just until cheese starts to brown and tops of bread starts to toast. (1 or 2 minutes)

Step 5Serve with Chips or Fries and a Pickle!
