Ingredients

Add to Grocery List

  • 1 Tbsp
    butter or olive oil for grilling (i used a mixture of both)
  • 4 slice
    whole wheat bread
  • 2 Tbsp
    kalamata olives, pitted and minced
  • 2 Tbsp
    mayonnaise
  • 1 c
    arugula, loosely packed (approximately)
  • 2 slice
    comtè cheese (gruyere can substitute)

How to Make Comtè, Olive & Arugula Grilled Cheese Sandwich

Step-by-Step

  1. Heat up the olive oil and/or butter in a non-stick pan over medium heat.
  2. Spread two bread slices with the kalamata/mayo mixture. Top the other two bread slices with the cheese and arugula.
  3. Cook in the pan until golden brown on each side. Enjoy with a cold soup-cucumber, gazpacho or similar, as a suggestion!
