Ingredients
- 1 tablespoon butter or olive oil for grilling (i used a mixture of both)
- 4 slices whole wheat bread
- 2 tablespoons kalamata olives, pitted and minced
- 2 tablespoons mayonnaise
- 1 cup arugula, loosely packed (approximately)
- 2 slices comtè cheese (gruyere can substitute)
How To Make comtè, olive & arugula grilled cheese sandwich

Step 1Heat up the olive oil and/or butter in a non-stick pan over medium heat.

Step 2Spread two bread slices with the kalamata/mayo mixture. Top the other two bread slices with the cheese and arugula.

Step 3Cook in the pan until golden brown on each side. Enjoy with a cold soup-cucumber, gazpacho or similar, as a suggestion!
