Ingredients

  • 1 tablespoon butter or olive oil for grilling (i used a mixture of both)
  • 4 slices whole wheat bread
  • 2 tablespoons kalamata olives, pitted and minced
  • 2 tablespoons mayonnaise
  • 1 cup arugula, loosely packed (approximately)
  • 2 slices comtè cheese (gruyere can substitute)

How To Make comtè, olive & arugula grilled cheese sandwich

  • Step 1
    Heat up the olive oil and/or butter in a non-stick pan over medium heat.
  • Step 2
    Spread two bread slices with the kalamata/mayo mixture. Top the other two bread slices with the cheese and arugula.
  • Step 3
    Cook in the pan until golden brown on each side. Enjoy with a cold soup-cucumber, gazpacho or similar, as a suggestion!
