This is an easy one to cobble together and is excellent with a few chips on a warm Summer’s evening, and a nice cold larger. Served these yesterday evening as a simple dinner on a rainy evening. We relaxed outside and chatted as the rain softly drummed on the roof of the pergola. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 tablespoons mayonnaise, plain variety, i prefer dukes’
- 1 tablespoon hot sauce, i prefer franks’
- 2 slices sandwich bread, your choice, slightly toasted
- 2 ounces shredded cheese, i prefer sharp cheddar
- 1 - 2 pinches hungarian paprika
- 1 medium dill pickle, thinly sliced

Step 1PREP/PREPARE

Step 2Besides the ingredients, all you need for the recipe is a skillet, and a good appetite.

Step 3Gather your ingredients (mise en place).

Step 4Mix the mayonnaise and hot sauce together and brush some on one side of a slice of slightly toasted bread.

Step 5Place the bread, mayo-side-down, into a skillet over medium low heat, and add the cheese.

Step 6Sprinkle with a bit of paprika.

Step 7Add the pickles.

Step 8Top with the other slice of bread, and brush on the remainder of the mayo/hot sauce mixture.

Step 9After 2 – 3 minutes flip and allow to cook on the other side for 2 – 3 minutes.

Step 10PLATE/PRESENT

Step 11Serve with chips and a tall cold one. Enjoy.
