Got some nice fresh bagels hanging around and a good sharp knife? Well, you’re half way there. A minimum number of ingredients… A maximum amount of flavor. It’s a simple sandwich to prepare. It is just the perfect thing to share at a casual Sunday brunch out by the pond; as the Summer sun peers through the leaves, and the squirrels play tag on the freshly-cut lawn. So, you ready… Let’s get into the kitchen.

How To Make brunch essentials: turkey, ham & cheese bagels

  • Step 1
    PREP/PREPARE
  • Step 2
Gather your Ingredients (mise en place).
  • Step 3
Chef's Note: Slice the bagels into 1/4-inch (.6cm) rounds. You should have about eight rounds.
  • Step 4
Chef’s Tip: Use a good sharp knife, and watch your fingers.
  • Step 5
    Lightly toast the rounds.
  • Step 6
Take four of the rounds, and match them up with the other four. One will be the top and one will be the bottom.
  • Step 7
Brush some chipotle mayonnaise or brown mustard (I prefer Grey Poupon), on the bottom rounds.
  • Step 8
Chef's Note: I know these don't look like a traditional bagel, that's because I made them from bagel dough, but didn't make them in the traditional shape.
  • Step 9
Chef’s Note: If you’ve never used a good chipotle mayonnaise you should definitely give it a try. It has just the right amount of spice and kick to elevate this sandwich from ordinary to extra ordinary.
  • Step 10
Add two slices of deli ham (I prefer Black Forest).
  • Step 11
    Add a slice of provolone.
  • Step 12
Add two slices of turkey (I prefer a good smoked turkey).
  • Step 13
    Add another slice of provolone.
  • Step 14
Place under the broiler, until the cheese is bubbly and beginning to brown in spots, about 2 – 3 minutes.
  • Step 15
Brush a bit more chipotle mayonnaise, or brown mustard on the top bagel.
  • Step 16
Chef's Tip: If you choose to be proper, you may cut the sandwich in half, or you could choose to leave it whole.
  • Step 17
Chef’s Note: I tried this sandwich, using just turkey, and substituted the mayonnaise with blackberry preserves… AWESOME!!
  • Step 18
    PLATE/PRESENT
  • Step 19
I like to serve this with a small bunch of garden greens with a nice freshly sliced tomato on top, and a splash of balsamic. Your guests can choose to eat the salad separately, or pile it on the sandwich… their choice. Enjoy.
  • Step 20
Keep the faith, and keep cooking.
