Brunch Essentials: Turkey, Ham & Cheese Bagels

Andy Anderson !

Got some nice fresh bagels hanging around and a good sharp knife? Well, you’re half way there.

A minimum number of ingredients… A maximum amount of flavor.

It’s a simple sandwich to prepare. It is just the perfect thing to share at a casual Sunday brunch out by the pond; as the Summer sun peers through the leaves, and the squirrels play tag on the freshly-cut lawn.

So, you ready… Let’s get into the kitchen.

How to Make Brunch Essentials: Turkey, Ham & Cheese Bagels

  2. Gather your Ingredients (mise en place).
  3. Chef's Note: Slice the bagels into 1/4-inch (.6cm) rounds. You should have about eight rounds.
  4. Chef’s Tip: Use a good sharp knife, and watch your fingers.
  5. Lightly toast the rounds.
  6. Take four of the rounds, and match them up with the other four. One will be the top and one will be the bottom.
  7. Brush some chipotle mayonnaise or brown mustard (I prefer Grey Poupon), on the bottom rounds.
  8. Chef's Note: I know these don't look like a traditional bagel, that's because I made them from bagel dough, but didn't make them in the traditional shape.
  9. Chef’s Note: If you’ve never used a good chipotle mayonnaise you should definitely give it a try. It has just the right amount of spice and kick to elevate this sandwich from ordinary to extra ordinary.
  10. Add two slices of deli ham (I prefer Black Forest).
  11. Add a slice of provolone.
  12. Add two slices of turkey (I prefer a good smoked turkey).
  13. Add another slice of provolone.
  14. Place under the broiler, until the cheese is bubbly and beginning to brown in spots, about 2 – 3 minutes.
  15. Brush a bit more chipotle mayonnaise, or brown mustard on the top bagel.
  16. Chef's Tip: If you choose to be proper, you may cut the sandwich in half, or you could choose to leave it whole.
  17. Chef’s Note: I tried this sandwich, using just turkey, and substituted the mayonnaise with blackberry preserves… AWESOME!!
  19. I like to serve this with a small bunch of garden greens with a nice freshly sliced tomato on top, and a splash of balsamic. Your guests can choose to eat the salad separately, or pile it on the sandwich… their choice. Enjoy.
  20. Keep the faith, and keep cooking.
