brunch essentials: turkey, ham & cheese bagels
Got some nice fresh bagels hanging around and a good sharp knife? Well, you’re half way there. A minimum number of ingredients… A maximum amount of flavor. It’s a simple sandwich to prepare. It is just the perfect thing to share at a casual Sunday brunch out by the pond; as the Summer sun peers through the leaves, and the squirrels play tag on the freshly-cut lawn. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 large bagels
- 8 slices fresh deli turkey
- 8 slices fresh deli ham
- 8 slices smoked provolone cheese, thinly sliced
- - chipotle mayonnaise, or a good brown mustard
- ADDITIONAL ITEMS
- - fresh tomato slices
- - fresh garden lettuce
- - balsamic vinegar
- - maybe some nice chips
How To Make brunch essentials: turkey, ham & cheese bagels

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Chef's Note: Slice the bagels into 1/4-inch (.6cm) rounds. You should have about eight rounds.

Step 4Chef’s Tip: Use a good sharp knife, and watch your fingers.

Step 5Lightly toast the rounds.

Step 6Take four of the rounds, and match them up with the other four. One will be the top and one will be the bottom.

Step 7Brush some chipotle mayonnaise or brown mustard (I prefer Grey Poupon), on the bottom rounds.

Step 8Chef's Note: I know these don't look like a traditional bagel, that's because I made them from bagel dough, but didn't make them in the traditional shape.

Step 9Chef’s Note: If you’ve never used a good chipotle mayonnaise you should definitely give it a try. It has just the right amount of spice and kick to elevate this sandwich from ordinary to extra ordinary.

Step 10Add two slices of deli ham (I prefer Black Forest).

Step 11Add a slice of provolone.

Step 12Add two slices of turkey (I prefer a good smoked turkey).

Step 13Add another slice of provolone.

Step 14Place under the broiler, until the cheese is bubbly and beginning to brown in spots, about 2 – 3 minutes.

Step 15Brush a bit more chipotle mayonnaise, or brown mustard on the top bagel.

Step 16Chef's Tip: If you choose to be proper, you may cut the sandwich in half, or you could choose to leave it whole.

Step 17Chef’s Note: I tried this sandwich, using just turkey, and substituted the mayonnaise with blackberry preserves… AWESOME!!

Step 19I like to serve this with a small bunch of garden greens with a nice freshly sliced tomato on top, and a splash of balsamic. Your guests can choose to eat the salad separately, or pile it on the sandwich… their choice. Enjoy.
