This ooey gooey sammie is lick the plate delicious. The pimento cheese spread has cream cheese in it which isn't a traditional ingredient. It adds a hint of tang and helps with the melted cheese goodness. Pimento cheese had a hint of spice and the heat in this is just right. When melted, combined with the crisp bacon it's a flavorful duo. Using mayo toasts the bread to a beautiful golden brown. We did add a 3rd slice of bacon to our sandwich because there is no such thing as too much bacon for us.

Ingredients
- PIMENTO SPREAD
- 16 ounces cheese; half sharp cheddar and half monterey jack
- 8 ounces cream cheese, softened
- 1/2 cup mayonnaise, plus enough to spread on the sandwich
- 4 ounces diced pimentos
- 1/8 teaspoon salt, pepper, and garlic powder
- 1 teaspoon onion powder
- SAMMIE
- 2 slices bread
- 2 slices crisp bacon
How To Make bacon pimento cheese sammie

Step 1Add all pimento cheese ingredients to a bowl.

Step 2Mix all spread ingredients and chill. If you like spice, substitute Monterey with pepper jack.

Step 3Spread bread with a thin layer of mayo. Place on a skillet to toast.

Step 4Place a scoop of spread on bread.

Step 5Add cooked bacon.

Step 6Top with the second slice of bread. Enjoy!
