my favourite - bacon wrapped sirloin
Posting this here so that I can still find it. It's a family favourite. You can add additional vegetables to the dish if desired. "If you have never had a roast wrapped in bacon, you are in for a treat. The end result is a tasty and moist piece of beef."

Ingredients
- 2 1/2 pounds roast, sirloin tip
- 2 tablespoons tablespoons dijon mustard, coarse or smooth
- 1 teaspoon black pepper, freshly ground
- 1 teaspoon thyme leaves, fresh
- 6 slices bacon, thick, your favorite
- 3 - 4 medium sweet onions, wedged
How To Make my favourite - bacon wrapped sirloin

Step 1Preheat oven to 325 degrees.

Step 2Cut a few slits on top of roast to allow the bacon to flavour the meat.

Step 3Add the black pepper to the mustard and evenly spread all over the roast.

Step 4Place the roast in a pan and wrap the bacon tightly around the meat; making sure to cover the top and sides.

Step 5Bake at 325 degrees for 2 hours. Add the onions and any additional vegetables in the last 40 minutes.

Step 6Remove roast from oven and let sit for 15 min before slicing.

Step 7You can make gravy, if desired.
