Posting this here so that I can still find it. It's a family favourite. You can add additional vegetables to the dish if desired. "If you have never had a roast wrapped in bacon, you are in for a treat. The end result is a tasty and moist piece of beef."

Ingredients

  • 2 1/2 pounds roast, sirloin tip
  • 2 tablespoons tablespoons dijon mustard, coarse or smooth
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon thyme leaves, fresh
  • 6 slices bacon, thick, your favorite
  • 3 - 4 medium sweet onions, wedged

How To Make my favourite - bacon wrapped sirloin

  • Step 1
    Preheat oven to 325 degrees.
  • Step 2
    Cut a few slits on top of roast to allow the bacon to flavour the meat.
  • Step 3
    Add the black pepper to the mustard and evenly spread all over the roast.
  • Step 4
    Place the roast in a pan and wrap the bacon tightly around the meat; making sure to cover the top and sides.
  • Step 5
    Bake at 325 degrees for 2 hours. Add the onions and any additional vegetables in the last 40 minutes.
  • Step 6
    Remove roast from oven and let sit for 15 min before slicing.
  • Step 7
    You can make gravy, if desired.
