easter leg of lamb
Lamb wasn't typically served at my family home for Easter, but I have been exploring new things and enjoyed this dish last Easter at a friend's house. She said it didn't really have a source....it was just the way her grandmother always made it.

Ingredients
- 2 cloves garlic, minced
- 1 tablespoon paprika
- 2 teaspoons salt
- 1 1/2 teaspoons dried rosemary
- 1/2 teaspoon freshly ground black pepper
- 5-6 pounds leg of lamb
- 1 jar orange marmalade (18 ounce jar)
How To Make easter leg of lamb

Step 1Combine the first 5 ingredients in a bowl; stir well, and set aside.

Step 2Trim the fat from the lamb. Make 12 deep slits on the outside of the lamb. Rub the paparika mixture into the slits and over the entire surface of the lamb. Place on a rack in a roasting pan. Insert a meat thermometer, making sure it does not touch fat or bone.

Step 3Bake, uncovered, at 350 degrees for 45 minutes; baste with the orange marmalade.

Step 4Bake an additional 1 hour and 15 minutes or until the meat thermometer registers 160 deghrees (medium), basting frequently with the orange marmalade. Remove from the oven and let stand 15 minutes before serving.
