Lamb wasn't typically served at my family home for Easter, but I have been exploring new things and enjoyed this dish last Easter at a friend's house. She said it didn't really have a source....it was just the way her grandmother always made it.

  • 2 clove
    garlic, minced
  • 1 Tbsp
  • 2 tsp
  • 1 1/2 tsp
    dried rosemary
  • 1/2 tsp
    freshly ground black pepper
  • 5-6 lb
    leg of lamb
  • 1 jar(s)
    orange marmalade (18 ounce jar)

How to Make Easter Leg of Lamb

  1. Combine the first 5 ingredients in a bowl; stir well, and set aside.
  2. Trim the fat from the lamb. Make 12 deep slits on the outside of the lamb. Rub the paparika mixture into the slits and over the entire surface of the lamb. Place on a rack in a roasting pan. Insert a meat thermometer, making sure it does not touch fat or bone.
  3. Bake, uncovered, at 350 degrees for 45 minutes; baste with the orange marmalade.
  4. Bake an additional 1 hour and 15 minutes or until the meat thermometer registers 160 deghrees (medium), basting frequently with the orange marmalade. Remove from the oven and let stand 15 minutes before serving.
