The full title for this recipe is Rick Zywotko's Great Barbecue Sauce and World-Famous Ribs. In April of 1985, Rick Zywotko entered these ribs in a barbecue contest in Pittsburgh, Pennsylvania and he won with this recipe. Most of the cooking time is inside, just a bit on the outside grill. Although not mentioned in the original recipe, I always pull that tough membrane off the back of my ribs before cooking them. But that is optional.

Ingredients

  • 6-8 pounds pork spareribs
  • 2 cooking apples, unpeeled and halved
  • 3-4 cloves garlic, coarsely chopped
  • 12 ounces beer
  • 1 cup cider vinegar
  • 1 medium onion, chopped
  • 8 ounces can tomato sauce
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup white vinegar
  • 2 tablespoons chili powder
  • 2 tablespoons vegetable oil
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons salt
  • 1/4 teaspoon dry mustard

How To Make rick zywotko's great barbecue sauce and world-fam

  • Step 1
    Place the spare ribs in a Dutch oven; add the apple halves, garlic, beer, and cider vinegar. Add water to cover. Bring to a boil; reduce heat, and simmer for 45 minutes or until the meat is tender. Drain, discarding the apple halves and garlic.
  • Step 2
    Combine the onion and the remaining ingredients in a saucepan; stir well. Bring to a boil; cook, stirring constantly, for 10 minutes.
  • Step 3
    Place ribs on a large roasting pan or plate (to carry them to the grill). Baste the ribs with the sauce. Grill, covered, over medium-hot coals on a grill (around 350 to 400 degrees), about 10 minutes, turning occasionally and basting frequently with the sauce.
