Ingredients For white cajun chili

  • 1 lg
    white onions diced
  • 5
    celery ribs diced
  • 16 oz
    shitake mushrooms sliced
  • 1 c
    flour, seasoned
  • 5
    bay leaves
  • 3-4 clove
    garlic diced
  • 2 can
    each white beans,and great northern beans
  • 2
    pots coffee
  • 2
    each chipotle,and ancho chilis diced
  • 1 lb
    crawfish tails
  • 1 lb
    shrimp, peeled and deveined
  • 1 tsp
    chili powder
  • 2 c
    heavy cream
  • 2 lb
    andouille sausage,and italian sausage (spicy) sliced thinn

How To Make white cajun chili

  • 1
    in a 14"-16" cast iron dutch oven,(or a large dutch oven if makeing on the stove).Heat 1-1/2 tlbs And 2 tbl.butter till almost smoking. add onions,celery,mushrooms and garlic.cook untill tender. Add sausage,cook till golden.Add flour and cook stiring until light brown. ( you may need more or less flour for a proper roux).

    add coffee,cream,bay leaves,and chili powder,and chilies. Simmer for 1-1/2 to 2 hours.

    add beans ,crawfish tails,and shrimp. salt and pepper to tast. simmer another 15-20 min. serve with cheese,corn bread,or hush puppies
