in a 14"-16" cast iron dutch oven,(or a large dutch oven if makeing on the stove).Heat 1-1/2 tlbs And 2 tbl.butter till almost smoking. add onions,celery,mushrooms and garlic.cook untill tender. Add sausage,cook till golden.Add flour and cook stiring until light brown. ( you may need more or less flour for a proper roux).
