Ingredients

  • 1 pound ground pork, lean
  • 1/2 pound ground beef, extra lean
  • 1/4 cup onion, grated
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/8 teaspoon ground allspice
  • 1/8 teaspoon ground nutmeg
  • pinch ground clove
  • 1/2 cup potato, peeled and grated
  • - salt and pepper, to taste
  • 1 - pastry, for double crust 9-inch pie

How To Make tourtiére

  • Step 1
    Preheat oven to 400F.
  • Step 2
    In a heavy pot, place meat, onion, water, salt and pepper. Bring to the boil and reduce heat to medium. Cook until meat is well cooked, and no pink remains. Add allspice and nutmeg, plus a very small pinch of cloves. Mix well and taste. Add more salt if needed.
  • Step 3
    Place bottom pie crusts in pie plates. Spread grated potato over bottom. Sprinkle with salt. Top with meat mixture. Place second crust over entire mixture. Seal edges and cut vents into top pastry to allow steam to escape.
  • Step 4
    Bake for 15 minutes. Reduce heat to 350F and bake another 35 minutes.
  • Step 5
    Remove pie from oven and allow to cool on wire rack for 5 minutes before cutting and serving.
