too easy pork loin w/ spices & veggies
Again the closest supermarket had Hatfield pork loins on sale, so of course I snatched up a few, lol. They're great for left over stews, stir fry's etc. I had never used Honey Crisp apples for anything before but that's what I had on hand & they lent a sweetish, deep flavor to the loin.

Ingredients
- 1-22-oz pork loin, i used hatfield brand, non-seasoned
- 1/4 cup oilve oil
- 1 large or 2 medium sized honey crisp apples, cored, not peeled, sliced 1/4" thick
- 1 large red onion, quartered
- 1/4 cup light brown sugar
- 1/4 cup real maple syrup
- 1/8 teaspoon ground mustard
- 1/3 teaspoon salt, ( i used a little, plus added a little sea salt.)
- 1/4 teaspoon ground black pepper
- 1 large sweet potato, washed, peeled & quartered

Step 1Heat oven to 375. Lightly spray a 9 X 13" deep casserole dish. Season pork loin w/ salt, pepper & a little sea salt, ( if desired.)

Step 2In medium sized bowl, whisk the light brown sugar, maple syrup & dry mustard. Mix well. With a sharp knife, make slits into the loin every 1". Add some of the apples into the slits. Place remaining apples, red onions & sweet potatoes around the pork.

Step 3Drizzle olive oil on all sides of pork. Then pour the brown sugar-maple syrup mix over all ingredients. Cover the casserole dish w/ foil. Bake 45 mins. Uncover, spoon some of the juices from the bottom of pan over all and & bake another 10 mins. Take out of oven and let rest for 5 minutes.
