I like these one pot meals that cook up without having to fool with it until the end. Just add a salad and you have a complete meal.

2-1/2 lb
pork loin roast, cut in 4 or 5 pieces
1 c
red bell pepper strips
1 c
frozen green beans, thawed
1/4 c
teriyaki sauce
2 Tbsp
white wine vinegar
1 tsp
crushed red pepper, or less
2 clove
garlic, minced
1/4 c
creamy peanut butter
6 c
hot cooked basmati rice
1/2 c
chopped green onions
3 Tbsp
chopped, dry-roasted peanuts

How to Make Thai-Style Pork Stew


  • 1Trim fat from pork loin. Place pork, bell pepper, green beans, teriyaki sauce, vinegar, red pepper, and garlic in crockpot. Cover and cook on LOW for 8 hours.
  • 2Remove pork and chop. Add the peanut butter to liquid in slow cooker; stir until well blended. Stir in the chopped pork.
  • 3Combine stew and the hot cooked rice in a large serving bowl or individual bowls, topped with chopped green onions and chopped peanuts.
