I like these one pot meals that cook up without having to fool with it until the end. Just add a salad and you have a complete meal.

Slow Cooker Crock Pot


  • 2-1/2 lb
    pork loin roast, cut in 4 or 5 pieces
  • 1 c
    red bell pepper strips
  • 1 c
    frozen green beans, thawed
  • 1/4 c
    teriyaki sauce
  • 2 Tbsp
    white wine vinegar
  • 1 tsp
    crushed red pepper, or less
  • 2 clove
    garlic, minced
  • 1/4 c
    creamy peanut butter
  • 6 c
    hot cooked basmati rice
  • 1/2 c
    chopped green onions
  • 3 Tbsp
    chopped, dry-roasted peanuts

How to Make Thai-Style Pork Stew


  1. Trim fat from pork loin. Place pork, bell pepper, green beans, teriyaki sauce, vinegar, red pepper, and garlic in crockpot. Cover and cook on LOW for 8 hours.
  2. Remove pork and chop. Add the peanut butter to liquid in slow cooker; stir until well blended. Stir in the chopped pork.
  3. Combine stew and the hot cooked rice in a large serving bowl or individual bowls, topped with chopped green onions and chopped peanuts.
