I like these one pot meals that cook up without having to fool with it until the end. Just add a salad and you have a complete meal.

Ingredients

  • 2-1/2 pound pork loin roast, cut in 4 or 5 pieces
  • 1 cup red bell pepper strips
  • 1 cup frozen green beans, thawed
  • 1/4 cup teriyaki sauce
  • 2 tablespoons white wine vinegar
  • 1 teaspoon crushed red pepper, or less
  • 2 cloves garlic, minced
  • 1/4 cup creamy peanut butter
  • 6 cups hot cooked basmati rice
  • 1/2 cup chopped green onions
  • 3 tablespoons chopped, dry-roasted peanuts

How To Make thai-style pork stew

  • Step 1
    Trim fat from pork loin. Place pork, bell pepper, green beans, teriyaki sauce, vinegar, red pepper, and garlic in crockpot. Cover and cook on LOW for 8 hours.
  • Step 2
    Remove pork and chop. Add the peanut butter to liquid in slow cooker; stir until well blended. Stir in the chopped pork.
  • Step 3
    Combine stew and the hot cooked rice in a large serving bowl or individual bowls, topped with chopped green onions and chopped peanuts.
