Ingredients
- 1 can 8-oz. can sliced pineapple, undrained
- 2 tablespoons brown sugar, packed
- 2 teaspoons ground cumin
- 1 teaspoon cinnamon
- 1/2 teaspoon dried thyme
- 1/8 teaspoon ground cayenne pepper (or more to taste)
- 3 cloves garlic, pressed
- 1 pork loin, approx. 3 pounds
- 1 1/2 pounds sweet potatoes (2-3 medium), peeled
- 2 small red onions
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
How To Make taste of the islands pork roast

Step 1Drain pineapple, reserving 1/2 cup juice for the pork marinade. To make the marinade, mix together reserved juice, brown sugar, cumin, cinnamon, thyme and cayenne and add pressed garlic.

Step 2In a baggie, add the pork roast and pour marinade over it. Marinate approx. 4 hours or overnight.

Step 3Set oven temp to 350 degrees F. Cut sweet potatoes into 2 inch chunks. Cut onion into 4 wedges each and cut pineapple rings into quarters.

Step 4Spray a roasting pan with cooking spray and remove pork from marinade and add to the pan. Scatter veggies and pineapple around the roast. Season roast with salt and pepper. Cover the pan with foil and bake for approximately 1 hour.

Step 5After 1 hour, remove foil and continue baking 15-30 minutes longer or until done to your liking. Remove roast to a platter and allow it to rest (loosely tented with foil) for 10 minutes. Slice pork roast and place veggies around the meat slices.
