- Pat the pork loin dry with a paper towel. Mix together olive oil and Mrs. Dash original blend. Rub loin throughly with mixture.
- Spoon from skillet into bowl, add pico de gallo, grated cheese and a few spoonfuls of tomatillo salsa, toss. Serve on flour tortillas, corn tortillas, or I prefer low carb pita bread lightly toasted.
