Ingredients
- 2 quarts water
- 1/2 cup loose leaf black tea
- 1/3 cup kosher salt
- 1/4 cup sugar
- 1/4 cup molasses
- 1 - onion thinly sliced
- 1 tablespoon whole coriander seeds
- 1 tablespoon whole black peppercorns
- 1 teaspoon allspice
- 10 - whole cloves
- 2 - whole star anise
- 8 - cloves garlic smashed flat with back of knife
- 10 - spring thyme
- 5 - springs rosemary
- 2 - bay leaves
- 4 cups ice
- 8 (10) ounces bone in pork chops

Step 1In a large pot over medium high heat,combine water,tea,salt,molasses,sugar,peppercorns,allspice,clove,onion,coriander,star anise,garlic,thyme,rosemary,and bay leaves.Bring to boil. remove from heat.transfer to sealable container.Add ice and let cool to room temp.

Step 2strain. Add pork chops,seal and refrigerate for 24 hours. remove the pork chops from the brine. rinse and pat dry with paper towels.

Step 3place the pork chops on the prepared grill an d cook until an instantiated thermometer reaches 145 degrees, 5 to 7 min per side.
