sweet potato apple pork chops
I fell in love with this recipe when I used to cook it for my personal chef clients. It's one of my family's fall favorites. Optional cooking tip: add 2 Tablespoons of Grand Marnier at the end of the cooking process to give the sauce some additional flair.

Ingredients
- 2 tablespoons olive oil, extra-virgin
- 4 pork chops
- 1 1/2 cups cubed sweet potatoes
- 1 1/2 cups cubed apples
- 1/2 cup sliced onions
- 1/3 cup brown sugar, lightly packed
- 2 tablespoons corn starch
- 1/4 teaspoon salt, optional
- 2 tablespoons apple cider vinegar
- 1 1/2 cups orange juice
How To Make sweet potato apple pork chops

Step 1Heat oil in a large non-stick skillet over medium heat. Add pork chops and cook 3 minutes on each side, thicker pork chops 5 minutes on each side.

Step 2Peel and cut up sweet potatoes into small cubes. Do the same to the apple. Slice onions and dice. Remove chops from the skillet and keep warm. Add sweet potatoes, apple, and onions, and saute for 3 - 4 minutes until slightly tender.

Step 3Add pork chops back to the pan.

Step 4Combine brown sugar, corn starch, salt (if using), apple cider vinegar, and orange juice. Mix well.

Step 5Pour the mixture over the pork chops.

Step 6Cover skillet, reduce heat, and simmer for 40 to 60 minutes or until chops are tender. Season lightly with salt and pepper to enhance the flavors as desired.
