summer essentials: brats, peppers, onions in beer
It is Summer, and it is time for evenings out by the pond with friends and family, while serving great food. I made a ton of these for a catering event this afternoon, but I saved a few for myself. They are easy to make, and the slow cooker does all the heavy lifting. So, you ready... Let's get into the kitchen.

- PLAN/PURCHASE
- BUTTER-BRASIED ONIONS AND PEPPERS
- 4 tablespoons sweet butter, unsalted
- 1 large yellow onion, i prefer vidalia
- 1 large green pepper
- 1 teaspoon caraway seeds
- 1 teaspoon mustard seeds
- 1/2 teaspoon white pepper, freshly ground
- 1 pinch crushed red-pepper flakes
- - salt kosher variety, to taste
- THE BRATS
- 5 - 6 - good brats
- 12 ounces beer, 1 bottle
- 2 tablespoons white wine vinegar
- 1 tablespoon worcestershire sauce

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3BUTTER-BRAISE ONIONS AND PEPPERS

Step 4Chop the onions and the green pepper.

Step 5Add the butter to a skillet, over medium heat.

Step 6When the foaming subsides, add the onions.

Step 7Cook for 3 – 5 minutes until the onions begin to soften, and then add the chopped green pepper.

Step 8Cook for an additional 3 – 5 minutes, and then add the remainder of the dry spices (caraway seeds, mustard seeds, white pepper, crushed red-pepper flakes, and salt).

Step 9Stir for additional 3 – 5 minutes.

Step 10Remove the onions and peppers, and place in the bowl of a slow cooker.

Step 11THE BRATS

Step 12Add the brats to the skillet you cooked the veggies in.

Step 13Brown on all sides, about 1 – 2 minutes per side.

Step 14Add to the top of the onions and peppers.

Step 15Add the beer, and the remaining ingredients to the slow cooker.

Step 16Cook on low for 3 – 4 hours.

Step 18Serve in a simple manner in a bowl, and provide hotdog buns and spicy mustard, or just eat them plain with the onions, and peppers. Enjoy
