It is Summer, and it is time for evenings out by the pond with friends and family, while serving great food.

I made a ton of these for a catering event this afternoon, but I saved a few for myself.

They are easy to make, and the slow cooker does all the heavy lifting.

So, you ready... Let's get into the kitchen.

Slow Cooker Crock Pot

Ingredients

  • PLAN/PURCHASE

  • BUTTER-BRASIED ONIONS AND PEPPERS

  • 4 Tbsp
    sweet butter, unsalted
  • 1 large
    yellow onion, i prefer vidalia
  • 1 large
    green pepper
  • 1 tsp
    caraway seeds
  • 1 tsp
    mustard seeds
  • 1/2 tsp
    white pepper, freshly ground
  • 1 pinch
    crushed red-pepper flakes
  • ·
    salt kosher variety, to taste
  • THE BRATS

  • 5 - 6
    good brats
  • 12 oz
    beer, 1 bottle
  • 2 Tbsp
    white wine vinegar
  • 1 Tbsp
    worcestershire sauce

How to Make Summer Essentials: Brats, Peppers, Onions in Beer

Step-by-Step

  1. PREP/PREPARE
  2. Gather your Ingredients (mise en place).
  3. BUTTER-BRAISE ONIONS AND PEPPERS
  4. Chop the onions and the green pepper.
  5. Add the butter to a skillet, over medium heat.
  6. When the foaming subsides, add the onions.
  7. Cook for 3 – 5 minutes until the onions begin to soften, and then add the chopped green pepper.
  8. Cook for an additional 3 – 5 minutes, and then add the remainder of the dry spices (caraway seeds, mustard seeds, white pepper, crushed red-pepper flakes, and salt).
  9. Stir for additional 3 – 5 minutes.
  10. Remove the onions and peppers, and place in the bowl of a slow cooker.
  11. THE BRATS
  12. Add the brats to the skillet you cooked the veggies in.
  13. Brown on all sides, about 1 – 2 minutes per side.
  14. Add to the top of the onions and peppers.
  15. Add the beer, and the remaining ingredients to the slow cooker.
  16. Cook on low for 3 – 4 hours.
  17. PLATE/PRESENT
  18. Serve in a simple manner in a bowl, and provide hotdog buns and spicy mustard, or just eat them plain with the onions, and peppers. Enjoy
  19. Keep the faith, and keep cooking.
