Ingredients For spicy rice

15 ozapple cider

3/4 clong grain rice

1 tspbutter

1/2 cdark raisins

apple cider to cover raisins

1/2 conion, chopped

1/2 ccelery, chopped

1/4 tspground allspice

1/2 tspground cinnamon

1/2 tspkosher salt

1/4 tspfreshly ground black pepper

1 1/2 Tbsplight brown sugar

1granny smith apple, cored and chopped

1/2 csliced almonds, toasted
How To Make spicy rice

1Place 15-ounces of apple cider in a 3-quart saucepan along with rice and 1 teaspoon butter. Cover and cook according to package directions.

2Place raisins in a microwaveable container and pour apple cider over to cover. Microwave on high for 1 minute. Set aside for 5 minutes; drain on paper towels.

3Meanwhile, melt 1 tablespoon butter in a large skillet. Saute onions and celery until crisp-tender, about 4 minutes. Stir in allspice, cinnamon, salt, pepper, and brown sugar. Stir in cooked rice and plumped raisins, and heat through. Stir in chopped apple and remove from heat. Cover and let stand for 5 minutes. Sprinkle with almonds and serve. Goes great with pork.
