Ingredients
- 15 ounces apple cider
- 3/4 cup long grain rice
- 1 teaspoon butter
- 1 tablespoon butter
- 1/2 cup dark raisins
- - apple cider to cover raisins
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/4 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 tablespoons light brown sugar
- 1 - granny smith apple, cored and chopped
- 1/2 cup sliced almonds, toasted
How To Make spicy rice

Step 1Place 15-ounces of apple cider in a 3-quart saucepan along with rice and 1 teaspoon butter. Cover and cook according to package directions.

Step 2Place raisins in a microwaveable container and pour apple cider over to cover. Microwave on high for 1 minute. Set aside for 5 minutes; drain on paper towels.

Step 3Meanwhile, melt 1 tablespoon butter in a large skillet. Saute onions and celery until crisp-tender, about 4 minutes. Stir in allspice, cinnamon, salt, pepper, and brown sugar. Stir in cooked rice and plumped raisins, and heat through. Stir in chopped apple and remove from heat. Cover and let stand for 5 minutes. Sprinkle with almonds and serve. Goes great with pork.
