Ingredients For spicey pirate pork tenderloin-slow cooking

  • 1 lb
    pork tenderloin
  • 3/4 c
    flour
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    ground black pepper
  • 1 Tbsp
    dried chopped onion-or fresh
  • 1 jar
    smucker's low sugar apricot jam
  • 1/2 c
    orange juice, fresh
  • 1/2 c
    capt. morgan's spiced rum
  • 1/4 c
    amaretto liqueur
  • 2 Tbsp
    finely minced garlic
  • 1 pkg
    soft dried apricots
  • 1/4 c
    orange flavored cranberries (or regular)
  • 1 Tbsp
    olive oil
  • 1 tsp
    thyme, dried

How To Make spicey pirate pork tenderloin-slow cooking

    Roll the pork tenderloin in the flour & onion mixture and brown in a frying pan with the olive oil.

    Mix all other ingerdients except for cranberries together in mixing bowl.

    Pout a small amount of the liquid mixture into the bottom of the crock pot. Add the browned tenderloin and pour the remaining sauce over the meat. Sprinkle with the cranberries and cook on low for 6 hours. Meat should reach 140 degrees to be done.

    Serve meat (thinly sliced) over bed of brown rice (seasoned to taste) or with mashed potatoes. Add green salad and you meal is ready! Throw on a few extra cranberries for color if you want to dress it up.
