spaghetti squash carbonara
I just love spaghetti squash, Not only health benefits but the taste is great!!! So many recipes for it!! One of my favorite is this one. Carbonara is such and easy quick dinner, why not make it a bit healthier.

Ingredients
- 1 - spaghetti squash
- - olive oil
- 1/3 cup bacon
- 1/4 cup chopped onion
- 1/4 cup parmesan cheese
- 1/2 cup low fat milk
- 1 - minced garlic clove
- 1 - lg egg
- 1/4 cup chicken stock
- - s&p
How To Make spaghetti squash carbonara

Step 1Roast squash Cut in half remove seeds and brush with olive oil, and s&p. put cutside down in baking pan and roast at 425 for approximatly 30 til fork tender. Cool for ten min. and run fork thru for spaghetti.

Step 2Cook chopped bacon for 3 min. Add onion and garlic cook for 3min. til golden brown. Turn pan down to a med low.

Step 3Meanwhile in bowl combine milk, cheese, and s&p. Add spaghetti squash to pan and pour milk mixture over gently toss.

Step 4Wisk egg with warm chicken broth (i warmed in microwave for min.) gently add egg mixture to pan constantly stiring for 3-4 min til sauce thickens.
