skillet pork chops and rice

I have always used an electric skillet for this but you can use a large non-stick skillet on your stovetop.

Ingredients

  • 1 - medium onion, sliced
  • 1/4 cup celery, diced
  • 2 tablespoons vegetable oil
  • 4 large pork chops
  • 1 1/2 cups water
  • 2 tablespoons brown sugar, firmly packed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cans tomato sauce 8 oz.
  • 1 cup long grain white rice
  • MY KIDS GREW UP ON THIS AND THEIR DAD ABSOLUTELY LOVES IT. I CAN'T REMEMBER WHERE I GOT THE RECIPE, JUST THAT IT BECAME A FAVORITE IN OUR HOUSEHOLD.

How To Make skillet pork chops and rice

  • Step 1
    Saute onion and celery lightly in vegetable oil. Sprinkle chops with salt and pepper to taste. Add chops to skillet and brown on both sides. Then remove and set aside.
  • Step 2
    Add water, brown sugar, salt, pepper and 1 1/2 cups of the tomato sauce. Heat and stir bringing to a boil. Add rice and stir. There will be a lot of liquid but the rice will absorb it. Put chops into this mixture.
  • Step 3
    Cover and simmer for 30 minutes. Pour the remaining 1/2 cup tomato sauce over chops and simmer 15 minutes longer.
