sicilian vegetable soup

This is a recipe from my great great nona who lived in Sicily. I always make a very large batch and then freeze it in individual serving containers. I pack it for my daughters for lunch or use it for those awfully busy nights. I hope you enjoy!

Ingredients

  • 1 package sweet italian sausage (or any you like) sliced
  • 1 large onion (i like to use vidalias) sliced
  • 2 - celery chopped
  • 2 cloves garlic minced
  • 2 - zucchini chopped
  • 2 medium potatoes chopped
  • 2 medium carrot chopped
  • 1 package sliced mushrooms
  • 1 can diced tomatoes undrained
  • 2 - handfuls of green beans ends taken off and cut into thirds
  • 5 cups water
  • 1 cup red wine
  • 2 teaspoons salt
  • 3 sprigs basil or 1 tsp dried
  • 3 sprigs fresh thyme or 1 tsp dried
  • - black pepper
  • 2 - bay leaves

How To Make sicilian vegetable soup

  • Step 1
    Prepare all the Veggies
  • Step 2
    Put everything in a stock pot and bring to a boil for 5 mins
  • Step 3
    Simmer for about 4 hours.
