schweinebraten - german style roast pork
This is my own version of several Internet recipes I looked at. I borrowed a little of this, a little of that and came up with . . . good old-fashioned pork roast, German style. You know it's gotta be yummy!

Ingredients
- 2-4 pounds pork loan roast
- 2 tablespoons olive oil
- 1-2 teaspoon sage, dried
- 1/2 teaspoon rosemary, dried
- 1/2 teaspoon thyme, dried
- 2 tablespoons caraway seeds
- 1 tablespoon salt
- 1 teaspoon ground pepper
- 1 small head green cabbage
- 1 medium onion, roughly chopped
- 2 medium carrots, chopped
- 1 pound fingerling potatoes
- 1/2 cup water
- 1/2 cup white wine vinegar
- 1/2 cup beef broth

Step 1Rub the entire roast all over with the oil and sprinkle with caraway, salt and pepper, and other spices. Let stand for one hour and then place into the slow cooker

Step 2Wash the cabbage and cut into wedges. Add to slow cooker on top of roast. Add carrots, onions, and liquids to the slow cooker and turn on Low Heat. Cover and cook 5 - 6 hours.

Step 3Add fingerling potatoes to the slow cooker. Cover and continue cooking about 4 more hours.

Step 4Slice the roast thinly and serve with the broth and vegetables on the side.
