My oldest daughter Jeannie taught me how to make this years ago when she was a teenager and I still make it to this day. Its so quick and easy to make and is a very filling comfort food , its really yummy and hard not to go back for seconds. I have doubled this recipe easily for a bigger dish , just to have left overs , reheats well. I'm sure you could make this with chicken too with chicken flavored ramen.

Ingredients For sausage ramen dish

  • 2 pkg
    pork flavored ramen noodles with spice packet
  • 4
    hard boiled eggs
  • 1/2 lb
    bulk country sausage
  • 4 c
    water * reserved
  • salt & pepper to taste

How To Make sausage ramen dish

    Boil the eggs until hard boiled.
  • 2
    Fry the crumbles sausage in a medium frying pan until browned and done ; pour off most of the grease ; leaving about 1-2 TBS.

    Peel and chop all the boiled eggs and place in a large bowl.

    In a medium sauce pan boil the water and cook the ramen noodles according to the package.

    * reserve 1 cup of liquid.

    Drain but do not rinse the noodles.

    In the mixing bowl with the eggs , add the cooked noodles and add the cooked sausage.

    Sprinkle both seasoning packets on top of the noodles ; Moisten the pasta mixture with just enough of the reserved liquid from the pasta to moisten and mix up well ; if mixture is too dry add small amount of more liquid. (it should not be soupy , just moist )

    Season with salt and pepper to taste but go light on the salt because the packets are salty also and stir up well , until all the seasoning packet are mixed up with the pasta mixture.
