This is an economical meal. And it is super tasty as well. Even goes over with kids. Really goes well with Sriracha sauce!

Ingredients
- 1 medium onion, diced small
- 1 - green pepper, diced
- 3 sticks celery, diced
- 3 cloves garlic, chopped
- 2 tablespoons butter
- - greek seasoning
- - salt and pepper
- 2 cups jasmine rice, cooked
- 1 can red beans
- 1 - boneless pork roast
- 1/4 cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon liquid smoke flavoring
- - hot water
How To Make red beans with pork and rice

Step 1Place roast in crockpot with ACV, brown sugar, seasoned salt, and smoke. Cook on low for 8 hours. Then, when done, pull apart with fork. Add back to cooking liquid and stir. (Mix ACV, sugar, and salt and smoke in a measuring cup and add hot water to make 1 to 1 1/2 cups...Honestly, I don't measure this with precision. I go buy what looks good with the roast I have and what smells good at the time)

Step 2Saute vegetables and garlic in butter till soft. Season with salt and pepper and add Greek Seasoning. Add beans and stir.

Step 3Cook rice according to directions.

Step 4Place rice in bowl and top with a scoop of vegetable mixture and top with a small scoop of pork.

Step 5Save the rest of the pork for tacos or sandwiches later in the week. ( Be sure to serve those sandwiches with some coleslaw...divine!)
