This is an economical meal. And it is super tasty as well. Even goes over with kids. Really goes well with Sriracha sauce!

onion, diced small
green pepper, diced
3 stick
celery, diced
3 clove
garlic, chopped
2 Tbsp
greek seasoning
salt and pepper
2 c
jasmine rice, cooked
1 can(s)
red beans
boneless pork roast
1/4 c
apple cider vinegar
2 Tbsp
brown sugar
1 Tbsp
liquid smoke flavoring
hot water

How to Make Red Beans with Pork and Rice


  • 1Place roast in crockpot with ACV, brown sugar, seasoned salt, and smoke. Cook on low for 8 hours. Then, when done, pull apart with fork. Add back to cooking liquid and stir.

    (Mix ACV, sugar, and salt and smoke in a measuring cup and add hot water to make 1 to 1 1/2 cups...Honestly, I don't measure this with precision. I go buy what looks good with the roast I have and what smells good at the time)
  • 2Saute vegetables and garlic in butter till soft. Season with salt and pepper and add Greek Seasoning. Add beans and stir.
  • 3Cook rice according to directions.
  • 4Place rice in bowl and top with a scoop of vegetable mixture and top with a small scoop of pork.
  • 5Save the rest of the pork for tacos or sandwiches later in the week. ( Be sure to serve those sandwiches with some coleslaw...divine!)
