1Place roast in crockpot with ACV, brown sugar, seasoned salt, and smoke. Cook on low for 8 hours. Then, when done, pull apart with fork. Add back to cooking liquid and stir.
(Mix ACV, sugar, and salt and smoke in a measuring cup and add hot water to make 1 to 1 1/2 cups...Honestly, I don't measure this with precision. I go buy what looks good with the roast I have and what smells good at the time)
2Saute vegetables and garlic in butter till soft. Season with salt and pepper and add Greek Seasoning. Add beans and stir.
3Cook rice according to directions.
4Place rice in bowl and top with a scoop of vegetable mixture and top with a small scoop of pork.
5Save the rest of the pork for tacos or sandwiches later in the week. ( Be sure to serve those sandwiches with some coleslaw...divine!)
