purple passion cabbage stew

Even my nieces who were picky eaters loved this. When their mom asked them why they said "It's purplely pretty and yummy"! You can make it with green cabbage ,but I think the red gives it depth.

Ingredients

  • 2 pounds pork, cut into 1 inch cubes
  • 4 large potatoes, cut into 1 1/2 - 2 inch cubes
  • 1 - head red cabbage
  • 1 medium oinon, diced
  • 1/4 teaspoon celery seed
  • - salt and pepper to taste
  • 2 - 3 tablespoons olive oil
  • - water or chicken stock

How To Make purple passion cabbage stew

  • Step 1
    In large heavy pot heat oil till hot. Add diced onion and saute' untill translucent. Remove onions and set aside. Salt and pepper pork and lightly brown.
  • Step 2
    While pork is browning, cut cabbage into quarters, removing core, then cut each quarter into thirds.
  • Step 3
    Add onions,cubed potatoes,cabbage,and celery seed to pot. Add water or chicken stock 2/3rds up the pot.This will not look like alot of liquid, but the cabbage cooks down. Salt and pepper to taste. Bring to a boil then reduce heat, cover and cook 30 minutes or until potatoes are tender.
