Found this recipe in a Quick Cooking magazine years ago and have fixed it many times. It's easy. It's different. My family (seven kids) love it! Winner in our house.

pork tenderloin-cut into 1/4 inch slices
2 Tbsp
butter or margarine
1 can(s)
14 1/2 oz chicken broth--divided
8 small
red potatoes--quartered
1 Tbsp
dijon mustard
2 tsp
worcestershire sauce
1/4 tsp
1/8 tsp
1 c
sliced fresh mushrooms
1/2 c
green onions
2 Tbsp

How to Make Potato Pork Skillet


  • 1In a large skillet over med-high heat, brown pork in butter on both sides. Remove pork and keep warm. Set aside 1/4 cup of chicken broth.
  • 2Add potatoes, mustard, Worcestershire sauce, salt, pepper and remaining broth to the skillet. Bring to a boil.
  • 3Reduce heat; cover and simmer for 15-17 minutes or until potatoes are tender.
  • 4Stir in mushrooms, onions and pork. Cover and simmer 5 minutes longer or until meat is no longer pink.
  • 5In a small bowl, combine flour and reserved broth until smooth. Stir in pork mixture. Bring to boil; cook and stir until thickened.
