Found this recipe in a Quick Cooking magazine years ago and have fixed it many times. It's easy. It's different. My family (seven kids) love it! Winner in our house.

Ingredients

  • 1 pound pork tenderloin-cut into 1/4 inch slices
  • 2 tablespoons butter or margarine
  • 1 can 14 1/2 oz chicken broth--divided
  • 8 small red potatoes--quartered
  • 1 tablespoon dijon mustard
  • 2 teaspoons worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup sliced fresh mushrooms
  • 1/2 cup green onions
  • 2 tablespoons flour

How To Make potato pork skillet

  • Step 1
    In a large skillet over med-high heat, brown pork in butter on both sides. Remove pork and keep warm. Set aside 1/4 cup of chicken broth.
  • Step 2
    Add potatoes, mustard, Worcestershire sauce, salt, pepper and remaining broth to the skillet. Bring to a boil.
  • Step 3
    Reduce heat; cover and simmer for 15-17 minutes or until potatoes are tender.
  • Step 4
    Stir in mushrooms, onions and pork. Cover and simmer 5 minutes longer or until meat is no longer pink.
  • Step 5
    In a small bowl, combine flour and reserved broth until smooth. Stir in pork mixture. Bring to boil; cook and stir until thickened.
