pork tenderloin w/ grape/honey sauce

Since the farmers markets in my area recently had an overabundance of grapes on sale, I figured I would go crazy, lol. I asked 1 of the women who ran the market if she had any ideas on what to do w/ so many grapes and she said to try pairing it with pork. I tried several ways and finally came up with this and I must say, what a refreshing sauce instead of the usual mustard honey sauce.

Ingredients

  • - salt and pepper to taste
  • 2 pounds pork tenderloin
  • 2 teaspoons oil, i used olive oil
  • 1/3 cup shallots, minced
  • 1 tablespoon minced garlic
  • 2 cups seedless red grapes, halved
  • 2 tablespoons low-sodium soy sauce
  • 3 tablespoons honey
  • 1 teaspoon ground ginger
  • 1/2 teaspoon asian 5-spice powder

How To Make pork tenderloin w/ grape/honey sauce

  • Step 1
    heat oven to 425. Place foil in a medium sized baking pan, lightly spray w/ cooking spray. If grilling, set the grill to med-high.
  • Step 2
    Place pork in pan and season w/ salt and pepper. Cook 30 mins. If grilling, grill pork, ( watching carefully it doesn't overcook,) about 25 mins. When pork is done, cover and keep warm while making the sauce.
  • Step 3
    In lg saucepan, over medium heat, heat oil until hot. Add shallots and garlic. Cook until tender. Stir in grape halves, soy sauce, honey, ginger and 5-spice powder. Bring to a boil. Reduce heat and simmer, stirring, for about 15 mins. Let cool. Place sauce in blender or food processor. Blend or process until smooth. Slice pork and place on platter. Spoon some of the sauce over the pork slices. Serve the remaining sauce alongside the pork.
