Ingredients
- 1 1/2 pounds pork tenderloin
- 2 tablespoons packed brown sugar
- 2 teaspoons chili powder
- 4 tablespoons fresh lime juice
- 2 tablespoons olive oil, extra virgin15
- 1 can 15 oz..black beans rinsed
- 1/2 small pineapple cored and cut into small pieces
- 1 medium red bell pepper thinly sliced
- 1 - jalapeno peppers seeded and thinly sliced or use small green bell pepper thinly sliced
- 1 cup fresh cilantro chopped fine
- 1 small red onion thinly sliced {soak in lemon juice for 10 minutes and discard the juice

Step 1Heat oven to 400F..Line a rimmed baking sheet with foil..Mix together the sugar and rub it all over the pork..roast until internal temp is 145F about 20 to 25 minutes.

Step 2In a large bowl mix together the remaining ingredients...slice pork and serve with the pineapple salad.
