Ingredients

  • 1 1/2 pounds pork tenderloin
  • 2 tablespoons packed brown sugar
  • 2 teaspoons chili powder
  • 4 tablespoons fresh lime juice
  • 2 tablespoons olive oil, extra virgin15
  • 1 can 15 oz..black beans rinsed
  • 1/2 small pineapple cored and cut into small pieces
  • 1 medium red bell pepper thinly sliced
  • 1 - jalapeno peppers seeded and thinly sliced or use small green bell pepper thinly sliced
  • 1 cup fresh cilantro chopped fine
  • 1 small red onion thinly sliced {soak in lemon juice for 10 minutes and discard the juice

How To Make pork tenderloin and pineapple salad

  • Step 1
    Heat oven to 400F..Line a rimmed baking sheet with foil..Mix together the sugar and rub it all over the pork..roast until internal temp is 145F about 20 to 25 minutes.
  • Step 2
    In a large bowl mix together the remaining ingredients...slice pork and serve with the pineapple salad.
