Ingredients For pork tenderloin and pineapple salad

    pork tenderloin
  • 2 Tbsp
    packed brown sugar
  • 2 tsp
    chili powder
  • 4 Tbsp
    fresh lime juice
  • 2 Tbsp
    olive oil, extra virgin15
  • 1 can
    15 oz..black beans rinsed
  • 1/2 sm
    pineapple cored and cut into small pieces
  • 1 md
    red bell pepper thinly sliced
  • 1
    jalapeno peppers seeded and thinly sliced or use small green bell pepper thinly sliced
  • 1 c
    fresh cilantro chopped fine
  • 1 sm
    red onion thinly sliced {soak in lemon juice for 10 minutes and discard the juice

How To Make pork tenderloin and pineapple salad

    Heat oven to 400F..Line a rimmed baking sheet with foil..Mix together the sugar and rub it all over the pork..roast until internal temp is 145F about 20 to 25 minutes.

    In a large bowl mix together the remaining ingredients...slice pork and serve with the pineapple salad.
