1/2 smpineapple cored and cut into small pieces

1 mdred bell pepper thinly sliced

1jalapeno peppers seeded and thinly sliced or use small green bell pepper thinly sliced

1 cfresh cilantro chopped fine

1 smred onion thinly sliced {soak in lemon juice for 10 minutes and discard the juice

1Heat oven to 400F..Line a rimmed baking sheet with foil..Mix together the sugar and rub it all over the pork..roast until internal temp is 145F about 20 to 25 minutes.

2In a large bowl mix together the remaining ingredients...slice pork and serve with the pineapple salad.
