This is my spin on shepards pie made with leftover pork. It is both easy and delicious. The secret ingredient is dry packaged pork gravy mix, makes everything taste wonderful and rich.

Ingredients
- 1 cup onions, diced
- 1/2 cup celery, diced
- 3 tablespoons celery leaves, chopped
- 1 tablespoon butter
- 1/4 teaspoon each salt, pepper, thyme, dry mustard
- 3 cups cooked pork, diced
- 2 packages each .87 oz dry pork gravy mix
- 2 cups water
- 2 cups cooked corn, green beans, or veggie of your choice
- 2 cups leftover mashed potatoes made with cream and butter
- 1 teaspoon garlic, minced
- 1 1/2 cups grated extra sharp cheddar cheese divided
How To Make pork shepards pie

Step 1In a sauce pan melt butter, saute the onions and celery and celery tops until onion is translucent.

Step 2Add dry gravy mix, seasonings, 2 cups of water, and stir to combine, add diced pork and bring to a simmer.

Step 3Spray a casserole with non stick spray, pour in the pork mixture.

Step 4Spread the cooked veggies over the meat mixture.

Step 5In a bowl combine the mashed potatoes, garlic and 1 cup grated cheddar cheese.

Step 6Sptead the potatoes over the veggies and bake in a preheated 350 degree oven for about 1 hour or until bubbly.

Step 7Sprinkle the reserved cheese over the top and continue cooking until cheese starts to turn brown.
