- 2-3 lb - boneless pork roast
- 12 - red potatoes cut in half
- 1 package baby carrots
- 1 cup olive oil, extra virgin
- 2 tablespoons mccormics perfect pinch or mrs dash seasoning
- 1/2 teaspoon minced garlic
How To Make pork roast with potatoes and carrots

Step 1Mix olive oil with seasoning and garlic. Put veggies in crock pot and toss with 1/2 olive oil mixture, place roast on top of veggies, rub roast all over with remaining olive oil mixture. No need to add additional liquid, as natural juices from roast is enough.

Step 2put lid on crock pot and set on high for 6-7 hrs, till roast is fork tender.
