pork roast - dee dee's

This is one of many ways I like a pork roast. You are not limited to the veggies I've included, in fact apples and onions are very tasty with a pork roast in place of potatoes and carrots. And maybe a little sage. Nothing better than a one pot meal! Hope you enjoy!

Ingredients

  • 2 1/2 to 3 pounds pork loin roasts
  • 1 teaspoon turkish seasoning
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 to 3 slices hickory smoked bacon (i used thick) cut in half
  • 6 to 8 small red potatoes, halved and/or quartered depending on size
  • 3 to 4 - carrots, cut in nice size slices
  • 2 large celery ribs, cut in nice size slices
  • 1 large onion, cut up in nice chunks
  • 1/4 cup water
  • - additional salt and pepper for veggies

How To Make pork roast - dee dee's

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine seasoning and rub over pork roast.
  • Step 3
    Place roast fat side up in dutch oven, place strips of bacon on top.
  • Step 4
    Cut and slice vegetables. Sprinkle with salt and pepper to taste and place vegetables around roast and on top. Add water and cover with lid.
  • Step 5
    Bake covered for 1 hour, remove lid and continue bakiing an additional 30 minutes or until pork registers 160 degrees. NOTE: You may want to check for doneness after 1 hour. You don't want to over cook and you don't want to under cook pork.
  • Step 6
    Once I removed the roast from the oven, I allowed it to sit for 10 minutes before slicing. I spooned a little of the roast drippings on top of the sliced roast...Mmmm good! Hope you enjoy!
