pork n veg stir fry
Literally created this for dinner tonight, just wanted something different. Turned out way better than expected and was urged to share. Will feed two easy, but did four well with rice. And remember, the secret to a successful stir fry is to prepair all ingredients before heating the wok

Ingredients
- 1 pound pork loin,
- 1 - red bell pepper
- 1 - carrot
- 1 small onion
- 6-7 - asparagus
- 6-8 - mushrooms - sliced
- 1 can water chestnuts
- MARINADE
- 1 tablespoon soy sauce, light
- 1 tablespoon fish sauce
- 1 tablespoon mirin - sweet cooking rice seasoning
- 1/2 tablespoon sesame oil
- 1/2 tablespoon scotch bonnet pepper sacue - optional
- SAUCE
- 1 cup chicken broth
- 1 tablespoon soy sauce, light
- 1 teaspoon fish sauce
- 1 tablespoon mirin - sweet cooking rice seasoning
- 1/2 teaspoon sesame oil
- 2 teaspoons cornstarch
How To Make pork n veg stir fry

Step 1Cut pork into bite size strips, and put in bowl with marinade. Set aside Combine sauce ingredients in a bowl and set aside

Step 2Cut carrot and pepper into matchsticks Cut onion into small wedges Cut asparagus into 1 inch pieces, on the bias Slice mushrooms Drain water chestnuts

Step 3Heat a wok or large skillet to med-high, add tbsp of oil and stir fry pork to just done, (you may need to do this in batches) remove to plate.

Step 4Return wok to heat and add tbsp oil to wok and stir fry carrots, aparagus and water chestnuts for a couple minutes to crisp. Add peppers, onions and mushrooms and stir fry another couple minutes.

Step 5When veggies are done return meat to wok and add sauce. Stir to combine and remove from heat when sauce thickens. Serve with or without rice.
