A fast and healthy stir-fry. You could even use left-over cooked pork in this dish as well.

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 teaspoons cornstarch
  • 1 pound pork tenderloin, cut into 1/4 inch thick slices
  • 4 cups cut green beans (2 inch pieces)
  • 2 teaspoons dark sesame oil
  • cooking spray
  • 1-2 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1/4 cup sliced green scallions (more to garnish)
  • 1/4 cup low-sodium chicken broth
  • 2 cups cooked rice
  • 1/4 cup chopped cashews, unsalted and toasted

How To Make pork & green bean stir fry with cashews

  • Step 1
    Mix the soy sauce and cornstarch to make a slurry. Add pork, stirring to coat. Cover and chill.
  • Step 2
    Place beans in a saucepan of boiling water and par boil for approx. 5 minutes. Drain and plunge into ice water - then drain.
  • Step 3
    Heat sesame oil in a large nonstick skillet (coated with cooking spray) over medium-high heat. Add the ginger, scallions and garlic and stir-fry for approx. 1 minute. Add pork mixture and stir fry 1 1/2 minutes. Add green beans and stir-fry another 1 1/2 minutes. or until pork is done.
  • Step 4
    Stir in broth and reduce heat - simmer 2 minutes. Serve over cooked rice and add chopped cashews on top. Garnish with sliced scallions.
