pork essentials: thrice-cooked yummy pork loin
In the pan, in the oven, and then back in the pan… The process produces beautifully seared strips of pork with a sweet caramelized taste that will have your guests asking for more. And you can have this on the table in less than one hour. FYI: This makes for some amazing sandwiches... just sayin' So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE RUB INGREDIENTS
- 1/2 cup coconut sugar
- 1 tablespoon sweet paprika
- 1 pinch cayenne pepper, or to taste
- 1 teaspoon ginger powder
- 1/2 teaspoon black pepper, freshly ground
- 1/2 teaspoon salt, kosher variety, or to taste
- THE ASSEMBLY
- 2 medium boneless, thick cut pork loin chops, about 1 pound
- 1 large yellow onion
- - grapeseed oil, as needed
- - balsamic glaze
- ADDITIONAL ITEMS (OPTIONAL)
- - chopped green onions, for garnish
How To Make pork essentials: thrice-cooked yummy pork loin

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Add all the rub ingredients together into a small bowl.

Step 4Remove the skin from the onion, cut pole-to-pole, slice into 1/4 inch (.6cm) half rounds, and reserve.

Step 5Take half the rub and rub it into the pork loin.

Step 6Place a rack in the middle position, and preheat the oven to 375f (190c).

Step 7Add about a tablespoon of grapeseed oil to an ovenproof skillet, over medium-high heat, and add the pork.

Step 8Sear on the sides and edges, about 1 - 2 minutes per side.

Step 9Chef’s Note: Keep an eye on the pork, and don’t allow the sugars in the rub to burn. We want a nice browning sear; not a blackened burn.

Step 10Place the pork loins on a parchment-lined baking sheet, fitted with a rack. Place into the oven, and allow to bake for about 25 minutes.

Step 11Chef’s Note: If you don’t have a rack, then turn the pork loins over, halfway through the baking process.

Step 12Wipe out the pan, add a bit more grapeseed oil, and reduce the heat to medium.

Step 13Add the sliced onions, and cook, while the pork is baking.

Step 14Chef’s Tip: You can add a pinch of salt to get the process started.

Step 15Remove the pork loins from the oven, and allow them to rest for 10 minutes.

Step 16While the pork is resting, add a tablespoon or two of water to the onions, and stir.

Step 17Cut the pork into thick slices, and sprinkle half the remaining rub on one side of the pork.

Step 18Push the onions to the side of the pan, and then add the sliced pork, rub side down. Sprinkle the remaining rub over the top of the pork slices.

Step 19Allow the pork to cook, for about 2 minutes, and then flip and cook an additional 2 minutes.

Step 20PLATE/PRESENT

Step 21Serve on a nice plate, top with some of the onions, drizzle on some balsamic glaze and serve with your favorite side (potatoes, rice, stewed apples). Enjoy.
