pork essentials: sweetly glazed pork loin

Ingredients
- THE PORK GLAZE
- 1/2 cup apricot preserves
- 1/2 cup peach preserves
- 2 tablespoons fresh clover honey
- 2 tablespoons lemon juice, freshly squeezed
- THE PORK LOIN
- 3 - 4 pounds boneless pork loin
- 2 tablespoons olive oil, extra virgin
- 1 tablespoon salt, kosher variety
- 1 tablespoon white pepper, freshly ground

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3THE PORK GLAZE

Step 4Add all the ingredients to a small saucepan over medium-low heat.

Step 5Whisk together and bring up to a light simmer.

Step 6Allow to lightly simmer for 5 minutes, then remove from the heat, and reserve.

Step 7THE PORK LOIN

Step 8Remove the pork loin from the fridge, and allow to rest on the countertop for 20 – 30 minutes.

Step 9Place a rack in the middle position, and preheat the oven to 425f (220c).

Step 10Mix the salt & pepper together in a small bowl.

Step 11Rub the olive oil over the pork loin, and then sprinkle with the salt & pepper.

Step 12Line a rimmed baking sheet with parchment paper, and add a rack.

Step 13If you have one, insert an instant-read thermometer into the center of the roast, and place on the rack.

Step 14Roast the pork loin for 15 minutes.

Step 15Remove from the oven, reduce the heat to 300f (150c), and brush on some of the glaze.

Step 16Return to the oven, and roast until the internal temp reaches 135f (60c), about 35 to 40 minutes.

Step 17Chef’s Note: Baste with additional glaze two more times, at 15 minute intervals.

Step 18Remove from the oven cover with foil, and allow to rest for 15 minutes, before slicing.

Step 19Chef’s Note: Carryover cooking will increase the internal temperature of the pork loin to 140f (60c). If you want yours cooked to a higher temperature, just remember to take it out of the oven when it is about 5 degrees of your target temperature.
