pork essentials: spicy onion/pepper stew
This is an easy/peasy dish to assemble, and pops in and out of the oven in 3 hours or less. A pork shoulder is the best cut of pork for this dish, because it can stand up to the 3 hours in the oven and come out tender and tasty. I like to serve this over steamed white rice, with a sprinkle of sesame seeds, and a small side salad lovingly drizzled in a light vinaigrette. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 pounds pork shoulder
- 1 tablespoon olive oil, extra virgin variety
- 1/2 medium yellow onion, sliced 1/2 inch (1.3cm) thick
- 1/2 teaspoon salt, kosher variety, or to taste
- 1/2 teaspoon white pepper, freshly ground, or to taste
- 3 - 4 cloves garlic, minced
- 1/2 cup fresh clover honey
- 1/4 teaspoon crushed red pepper flakes
- 1 medium red or green bell pepper, seeded, ribs removed, sliced into strips
- 1/2 teaspoon toasted sesame oil
- ADDITIONAL ITEMS
- more sesame seeds, for garnish
- steamed white or brown rice, for serving
- a small side salad

Step 2To make this recipe you will need a good ovenproof pot with a lid. I prefer my Dutch oven.

Step 3I mentioned this in the introduction, but it bears repeating. The best cut of pork for this recipe is a pork shoulder, with most of the fat cap removed. For example, if you try this dish using a tenderloin, you will wind up with dried up bits of pork. How do I know that… because I tried one. Live and learn.

Step 4Gather your ingredients (mise en place).

Step 5Place a rack in the bottom position and preheat the oven to 350f (175c).

Step 6Remove most of the fat from the pork shoulder, then cut into 2-inch (5cm) cubes.

Step 7Add the pork and sliced onions to an ovenproof pot, then toss with the olive oil, salt and pepper.

Step 8Place into the preheated oven, covered, and bake, for 1 hour.

Step 9Remove from the oven, use a ladle or large spoon to remove about half the liquid.

Step 10Stir in the honey, red-pepper flakes, and garlic.

Step 11Return to the oven, uncovered, and cook an additional 2 hours.

Step 12Open the oven and stir the pork about every 20 minutes or so.

Step 13About twenty minutes before the end of the baking time, add the red/green bell peppers.

Step 14Remove from the oven, stir in the sesame oil, and allow to sit for 10 minutes before serving.
