I love pomegranate juice, so figured I would try it with some tenderloin I had, it came out unbelieveable!! I used POM-juice from the refrigerated section of the market.

Ingredients For pom-juicy pork tenderloin

1 tspcanola oil

1-1/2 lbpork tenderloin, trimmed

1/2 tspsalt and pepper each

1 cpomegranate juice
-
1/4 cbalsamic vinegar
-
1/3 cpacked light brown sugar

1onion, chopped

1/4 cpomegranate seeds
How To Make pom-juicy pork tenderloin

1Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. Heat oil in lg skillet over med-high heat. Sprinkle pork w/ salt & pepper. Place pork in skillet and brown on all sides.

2Remove pork to baking pan. Bake about 20 mins. Meanwhile, in another skillet. Combine juice, vinegar, brown sugar, onion and seeds. Cook over medium heat, stirring until sauce begins to thicken.

3Slice pork and serve w/ sauce.
