Some time I love to eat pizza, But don't want all those carbs.. So i decide to make a soup and enjoy it just the same.. I don sometime add homemade basil croutons to go on top..

Ingredients
- 1 medium onion, finely chopped
- 1 cup mozzarella cheese
- 3 ounces pepperoni
- 1 teaspoon beef bouillon
- 1 can tomatoes, undrained
- 1/2 cup mushrooms, sliced
- 1/2 tablespoon dried basil
- 1 cup water
- 1/4 cup green bell pepper, thinly sliced
- 1 tablespoon vegetable oil
How To Make pizza soup

Step 1Turn on broiler. Heat oil in a heavy nonstick skillet over med high heat. Saute onion, mushrooms and bell pepper. until softened , 3-4 minutes. Add the remaining ingredients and cook just until heated through. Ladle soup in ovenproof bowls and sprinkle with cheese. Broil 1-2 minute or until cheese is bubbly..
