pineapple ham loaf
This is a delicious ham loaf that my family has love for about 100 years! Sometimes my mother would double or triple the recipe if company was coming or if she wanted to have leftovers. (We had a big family).

Ingredients
- 2 cans crushed pineapple including juice (set 1/2 can aside)
- 4 cups bread crumbs
- 6 large eggs (beaten well)
- 1 - each; red and green bell peppers (minced) set 1/2 cup aside
- 1 large onion (minced very fine)
- 4 pounds smoked ham (ground)
- 2 1/2 pounds pork (ground)
- 3 tablespoons soy sauce
- 1 teaspoon dry mustard
- 1 teaspoon ground black pepper
- 1/4 teaspoon ground red pepper
- 1/3 teaspoon salt (optional)
- TOPPING
- 1/2 can crushed pineapple (including juice)
- 1/2 cup miced red and green bell pepper
- 1/2 teaspoon dry mustard
- 5 tablespoons honey
- 1 tablespoon prepared yellow mustard
How To Make pineapple ham loaf

Step 1Preheat oven to 350 degrees.

Step 2Set 1/2 can of crushed pineapple aside. Put the rest in a bowl (including juice). Stir in the bread crumbs, Leave sit.

Step 3Beat the eggs and soy sauce and spices together well in large bowl. Add the green pepper, meats and mix together very well. Add the pineapple and bread mixture. Combine together well.

Step 4Put into a roast pan, form into a loaf. Bake at 350 degrees for 2 hours.

Step 5While the loaf is baking: Make the topping for the loaf by mixing all ingredients together and set aside until the last 35 minutes of cooking. Spread it over the loaf and return to oven for remaining time.

Step 6Remove from oven and let sit for 10 minutes before slicing to serve.

Step 7*** I serve this with mashed potatoes or rice, and with a vegetable mixture
