nor's grilled asian pineapple pork loin

I love Asian inspired dishes.working with ingredients I had on hand. I came up with this dish. This is a Pork loin marinated in soy sauce pineapple juice with spices. It is Low fat and delicious. Hubby enjoyed it very much. I hope you all give it a try. Enjoy!

Ingredients

  • MARINADE
  • 1 1/2 - 3 pounds pork loin cut into 2 inch thick pieces
  • NOTE: IF YOU ARE NOT MAKING THE SAUCE. YOU CAN USE10 OUNCES OF REGULAR PINEAPPLE JUICE , INSTEAD OF CRUSHED PINEAPPLE.
  • 20 ounces can crushed pineapple drained reserving juice and pineapple seperately
  • 3 tablespoons low sofium soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves grated garilc
  • 1 tablespoon honey
  • 2 tablespoons extra virgin sesame oil
  • 1 teaspoon 5 spice powder
  • 1 x 1" - picece of ginger root grated
  • 1 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • - shish cabob sticks if desired
  • PINEAPPLE SAUCE
  • - reserved pineapple from can
  • 1 tablespoon brown sugar
  • 3 tablespoons apricot jam
  • 1 tablespoon corn starch
  • 2 tablespoons water

How To Make nor's grilled asian pineapple pork loin

  • Step 1
    Drain pineapple juice into a bowl. Reserve pineapple. Mix all ingredients except pork in a bowl.
  • Step 2
    Pour marinade into a gallon size bag. Add the Pork Pieces. Marinade 6-24 hrs.
  • Step 3
    Spray grill with vegetable oil spray. Heat grill to high heat. Grill pork until centers is at least medium. A little pink is fine.
  • Step 4
    Add sugar, Apricot jam, and crushed pineapple together in a microwavable bowl. Microwave on high 3 minutes. Mix corn starch and water together. Add to pineapple and stir. Place back in microwave and cook 2 more minutes.
  • Step 5
    Serve pork with pineapple if desired. I served my pork over Jasmine Rice.
