No Fat Italian Sausage

found this in a low fat book my mother gave me as a Christmas gift ages ago. It is one ingredient for Italian sausage soup, which I will post .

1 lb
boneless pork loin, or tenderloin, cut up
1/4 c
dry white wine
2 Tbsp
chopped parsley
1 1/2 tsp
crushed fennel seeds
1/2 tsp
crushed red pepper flakes
2 clove
garlic, minced


1trim meat of any fat, and membranes to assure is fat free
2cut in chunks, and chop a small amt at the time in food processor or thru meat grinder
3add all the spices and wine. process until well distributed thru meat,
4place in covered airtight container. can be kept for up to one day in refrigerator
