low calorie pork tenderloin w/ smokey expresso rub

My cousin sent me this recipe and stated it has only 151 calories with 3.9 grams of fat.After making this all Woody and I can say is this did turn up the WOW factor as pork tenderloin gets dresses up with thie palate-pleasing tastes of smoky and sweey.I was so tender that it almost melted in your mouth and was just enough for the two of us along with some green beans,baked sweet potatoes and a green salad.

Ingredients

  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon instant expresso granules or 2 teaspoons of instant coffee granules
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • 1 pound pork tenderloin, trimmed
  • - cooking spray
  • 1 teaspoon light olive oil
  • 1/2 cup water

How To Make low calorie pork tenderloin w/ smokey expresso rub

  • Step 1
    Preheat your oven to 425
  • Step 2
    Combine the first 7 ingredients and rub mixture over pork. Cover and let stand for 15 minutes.
  • Step 3
    Heat a large ovenproof skillet over medium high heat and coat it with cooking spray.
  • Step 4
    Heat oil in pan and add pork;cook 2 minutes on each side or until all sides are browned.
  • Step 5
    Place in oven and bake for 20 minutes or until meat thermometer register 160 (light pink)
  • Step 6
    Remove pork from pan,reserving drippings in pan. Cover pork with foil and let stand for 5 minutes. (the meat will finish cooking and the juice will remain in the meat)
  • Step 7
    Stir 1/2 cup of water into drippings, scraping pan to loosen brounded bits.
  • Step 8
    Slice pork and drizzle sauce over it and serve with your favorite sides.
