There's never been a ham loaf recipe I didn't like. Whether it be my moms, grams, aunts or friends. We love our ham loaves & is a PA staple. I concocted this one today. It turned out so tender and juicy. I usually don't add pineapple to the top, but thought I'd try it for a change. The addition on the loaf, plus the juice in the sauce made for one of the best I've ever had. So easy, yet tasty. Hubby already requested for Easter. Goes great with scalloped potatoes, which is what I usually serve it with, although tonight it was fingerling potatoes and home made pinto beans. Enjoy!

Ingredients For ~ my glazed ham loaf w/ pineapple ~

  • THIS HAM LOAF CAN BE MADE WITHOUT THE PINEAPPLE. BUT MAKE SURE YOU GLAZE WITH SAUCE
  • 1 lb
    ground ham
  • 1 lb
    ground pork
  • 3/4 tsp
    each - salt & pepper
  • 1 1/2 Tbsp
    brown sugar
  • 2
    eggs
  • 4 slice
    fresh wheat or white bread crumbs - or 2 cups worth
  • 1/2 c
    milk
  • 1 md
    onion, minced
  • 1/4 tsp
    paprika
  • 1/4 - 1/2 CUP DRAINED CRUSHED PINEAPPLE FOR THE TOP
  • BASTING SAUCE
  • 1/4 c
    vinegar
  • 1/2 c
    brown sygar
  • 1/4 c
    pineapple juice
  • 1 Tbsp
    dry mustard

How To Make ~ my glazed ham loaf w/ pineapple ~

    In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.

    Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.

    Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.

    Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.

    Place onto a serving platter and slice. Serve with remaining glaze.
