This recipe comes from one of the many cookbooks I got from my mom when she gave me her Redi-Set-Go machine. I love those things and it makes it real easy for me to cook my food and lose weight.

1 medium
russet potato, peeled and cooked
2 Tbsp
1 medium
onion, chopped
1 clove
garlic, chopped
1 c
ground pork
1 tsp
salt, divided
1/2 tsp
pepper, divided
4 oz
mushroom, sliced
1/4 c
white wine, or chicken broth
1/4 c
sour cream

How to Make Mini Pork and Potato Loaves


  • 1Mash cooked potato and set aside.
  • 2Heat butter in skillet and saute onion and mushroom with salt and pepper until tender, about 5 minutes.
  • 3In a bowl place about 1/4 of onions mushroom mixture and using paring knife and fork chop into small pieces.
  • 4Add pork and potato and mix well.
  • 5Form into 2 balls.
  • 6Preheat Xpress with divider pan and spray with nonstick cooking spray.
  • 7Place pork mixture in wells using fork to distriblute mixture evenly. Close cover.
  • 8Cook 12 minutes.
  • 9Heat pan with remaining mushrooms, add wine and sour cream, stirring to make sauce.
  • 10Serve sauce over pork.
