millies country pork chops.

This was taught to me by my loving sister.Who I miss. I started making this over the open fire years ago...

Ingredients

  • 6 - butterfly pork chops.
  • 6 slices bacon.
  • 3 medium onions chopped.
  • 8oz - mushrooms (your choice).
  • 4 cloves garlic minced.
  • 1/3 cup dijon mustard.
  • 2 tablespoons horseradish
  • 2 cups veggie stock.this were ii changed things,i use beer.
  • 1 can whole kernel corn (draind)
  • 1/2 tablespoon red pepper flakes
  • 1 cup bbq sauce

How To Make millies country pork chops.

  • Step 1
    (just a note to start with. You want a good bed of coals,not flame when making this). In a good sized cast iron dutch oven,(I use a 12qt)... Cut bacon in half and cook till almost chrisp. Remove bacon and put on paper towl and save...In bacon drippings brown pork chopes on one side..
  • Step 2
    Turn chops over,a add onions,garlick,and mushrooms. Cover and cook abought 10 minutes over med heat..In a small bowl mix mustard and horseradish..Uncover spoon on mixture over chops. Add 2 beers( Or 2 cups of veggie stock),cover and cook 10 min over low heat. While cooking ( have a beeror a glass of wine)..
  • Step 3
    Remove from heat,add remaing ingredients. Cover put over low hear and let simmer for 10 to 15 min. I serve with or over wild rice.
