kielbasa. cabbage, potato & carrot 1 pot meal
Well, since we all know how the Corona virus has effected food shopping, I couldn't find corned beef and so found the Polish kielbasa and it worked just fine. It is more like a soup but that's perfect for these still cool days. The splash of cider vinegar gives it a nice "kick."

Ingredients
- 1/2 cup onions, slivered
- 3 cloves minced fresh garlic
- 2 tablespoons olive oil
- 7 small red potatoes, quartered, not peeled
- 14 ounces pkg of polish kielbasa, sliced into coins
- 3 cups green cabbage, cut into long, wide pieces
- 1-1/2 cup washed carrots, sliced into baby pieces
- 4-6 cups veggie broth or chicken broth
- 1/2 teaspoon celery salt
- 1 teaspoon fresh ground black pepper
- 1/2 teaspoon fresh chopped thyme or used dried
- 1/4 cup organic apple cider vinegar
How To Make kielbasa. cabbage, potato & carrot 1 pot meal

Step 1In a large pot, over med-high heat, pour in the olive oil, onions and garlic. Saute for 2 mins. Add Kielbasa. Saute 3 mins. Add potatoes and carrots. Add broth. Cover and bring to a boil.

Step 2Lower heat to med-low and add the cabbage, celery salt, black pepper and thyme. Bring to a simmer for 30-40 mins or until veggies are softened.

Step 3Splash in the cider vinegar and let cook another 10 mins.
