Posole (Pozole)can be used as side dish, appetizer or the main dish. It is served at New Years and on traditional Indian feast days for good luck...We love this dish it is a real tummy warmer and serve hot flour tortillas with it...It is great with the tamale recipe too...It is great for Christmas Eve also....It is a very hearty dish...I hope you enjoy this recipe as we do...my picture

Ingredients
- POSOLE (POZOLE)
- 2 pounds posole (pozole) or white hominy
- 1 1/2 pounds carne adovada (pork in redchile marinade)
- 2 tablespoons minced garlic
- 1/2 cup red chili powder (mild, med, hot)
- 1 tablespoon salt
- 1 tablespoon cumin powder
- 1 teaspoon mexican oregano
- RED CHILI SAUCE (GRAVY)
- 1 1/2 pounds ground sirloin
- 1/2 cup red chili powder
- 1/4 cup olive oil
- 1/2 cup flour
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 tablespoon salt
- 2 quarts water or chicken broth (give or take)
- COOK POSOLE IN 3/4 POT OF CHICKEN BROTH
- Wedge - fresh lime juice
- sprig cilantro, fresh chopped

Step 1Pre Soak over night.......In pressure cooker cooking time for Posole is 1 1/2 hr In dutch oven cooking time is 4 hours....medium high, you can use dry, frozen, or canned posole.

Step 2Place in pot Posole (pozole), pork (carne adovada), garlic and all dry ingredients for posole (pozole)and 3/4 pot full of Water or chicken broth in pressure cooker or crock pot.

Step 3Chili Sauce (Gravy) Medium High heat Brown ground sirloin in dutch oven or large skillet...add oil and red chili powder and all spices move around in with meat...add flour to hot meat, oil and spice, chili powder mixture as you would when making gravy...let brown while constantly using fork to keep from scorching...Pour water in a little at a time till you reach a gravy consistency...using the fork constantly till sauce (gravy) bubbles....

Step 4To serve place a couple of ladles of posole (pozole) with juice into bowl put a couple large spoonfuls of the chili sauce (gravy) on top of posole . Squeeze some fresh lime juice to really bring out the best flavor, garnish with fresh cilantro. Posole (pozole)....mix in together the two and ENJOY...with heated Flour Tortillas and a little butter.
