I love sub sandwiches, this is so easy to make and is a meal to it's self. This is a good way to get kids to eat vegetables like bell peppers, and onions. Who can resist?

Ingredients For italian sausage and pepper sub sandwich

3 lbitalian sausage, mild cut into 3/4 " slices

4medim green peppers, cut into strips

1medim onion cut into strips

2 Tbspolive oil
-
4 Tbspbeef broth

4plum tomatoes chopped
-
2 Tbspminced parsley
-
2 cshreded mozzarella cheese
-
4-6submarine sandwich rolls
-
salt and peppers to taste
How To Make italian sausage and pepper sub sandwich

1In a large skillet , cook the sausage over mediun heat until no longer pink. Add all the remaining ingredients except the mozzarella cheese and rolls.

2Cover and cook ao low to medium heat for 30 minutes or until vegetables are tender, stirring occasionally.

3When ready to serve place on toasted sub rolls with mozzarella cheese on top.
