I love sub sandwiches, this is so easy to make and is a meal to it's self. This is a good way to get kids to eat vegetables like bell peppers, and onions. Who can resist?

Ingredients

  • 3 pounds italian sausage, mild cut into 3/4 " slices
  • 4 - medim green peppers, cut into strips
  • 1 - medim onion cut into strips
  • 2 tablespoons olive oil
  • 4 tablespoons beef broth
  • 4 - plum tomatoes chopped
  • 2 tablespoons minced parsley
  • 2 cups shreded mozzarella cheese
  • 4-6 - submarine sandwich rolls
  • - salt and peppers to taste

How To Make italian sausage and pepper sub sandwich

  • Step 1
    In a large skillet , cook the sausage over mediun heat until no longer pink. Add all the remaining ingredients except the mozzarella cheese and rolls.
  • Step 2
    Cover and cook ao low to medium heat for 30 minutes or until vegetables are tender, stirring occasionally.
  • Step 3
    When ready to serve place on toasted sub rolls with mozzarella cheese on top.
