I love sub sandwiches, this is so easy to make and is a meal to it's self. This is a good way to get kids to eat vegetables like bell peppers, and onions. Who can resist?

Ingredients
- 3 pounds italian sausage, mild cut into 3/4 " slices
- 4 - medim green peppers, cut into strips
- 1 - medim onion cut into strips
- 2 tablespoons olive oil
- 4 tablespoons beef broth
- 4 - plum tomatoes chopped
- 2 tablespoons minced parsley
- 2 cups shreded mozzarella cheese
- 4-6 - submarine sandwich rolls
- - salt and peppers to taste
How To Make italian sausage and pepper sub sandwich

Step 1In a large skillet , cook the sausage over mediun heat until no longer pink. Add all the remaining ingredients except the mozzarella cheese and rolls.

Step 2Cover and cook ao low to medium heat for 30 minutes or until vegetables are tender, stirring occasionally.

Step 3When ready to serve place on toasted sub rolls with mozzarella cheese on top.
